Meet Gary and Dee Brown.
Our journey began in the bustling heart of the city, where for 15 years we poured our love into our bar and grill business. But we began to want to grow in the direction of something a little healthier, and work with techniques and food with more heart.
This led to opening a pizzeria with a wood fired pizza oven in Gary's small hometown, Silverton, Oregon. Cooking pizza at high heat several days a week keeps an oven warm all week, and it soon became the primary way we prepare everything, from meats and vegetables to seafood and desserts. We are continuously surprised with the ease in achieving even, consistent cooking and baking. Whichever fuel type you prefer, cooking with a pizza oven is an efficient way to cook whether at home in your outdoor kitchen or in a restaurant.
It’s a joy to have discovered the ease of cooking almost daily with only the oven at hand. The benefits of using a pizza oven are numerous, and having one in your outdoor living space or garden will enhance all your recipes. Besides pizza, we easily roast all vegetables and evenly cook or smoke meats like prime rib. Using a pizza oven is the most relaxing way to enjoy meals featuring salmon, prawns, and lobster; they cook so fast and clean up is a snap. We use the residual heat to bake bread to dip into our favorite olive oil and balsamic. If stone fruit or grapes grow past their prime, we coat them in avocado oil and place them just inside the oven door to roast with a wheel of softer cheese. We stuff mushrooms with spinach, artichoke hearts and cream cheese. The lowest temperatures dry my garden chile peppers. Life is good this way. Our pizza oven has been instrumental for the ease in which we’ve incorporated a more health conscious cuisine and a relaxing lifestyle for ourselves and our customers.
